The mixture is brought to a boil and then allowed to simmer till the meat falls off the bones. The bones are removed, the fat is skimmed off and the soup is left to stand. The next day the stockpot is reheated and thickened with a roux made from flour and oil, and the second set of ingredients are added. These can be a seafood, chicken, okra, Cajun vegetables, sausage, gumbo file, chilli and thyme. It is then cooked until tender and served with rice.
After the gumbo, there might be baked goose, a loin of pork or chicken served with homemade cornbread, sometimes with a dressing. It is also common to have a salad. Candied sweet potatoes, made with sweet potatoes, margarine, cinnamon, sugar, orange rind and vanilla cooked together until the chopped potatoes are tender might be served.
